Peanut Butter Chocolate Chip Cookie Dough Dip

Before I introduce you to a new recipe for you to try, I wanted to update everyone and let you know that I think I’m on the mend! I’m feeling better this morning and hopefully, I’ll continue to feel better as the day progresses. Unfortunately, the afternoons are usually what kills me. I’ve been sick since Sunday afternoon and I’m sick of being sick! I haven’t worked out since Saturday morning and I HATE that. Working out is what keeps me sane and going from day to day. The past week my crutch has been naps and going to bed between 8:30 and 9:00pm. I finally caved and scheduled a doctor’s appointment this afternoon. Hopefully I’ll get some meds and be better for the weekend! I’ve tried to blog some, but I’ve been a bad blog friend by not ready any blogs or commenting! Sorry friends, I promise to do better soon 🙂

Now, onto the actual topic at hand. FOOD! Food hasn’t really been on my mind the past few days and I definitely haven’t been cooking! However, I’ve been dying to share this recipe with you since I made it for my parents and then again last weekend! This peanut butter chocolate chip cookie dough dip is delicious and sure to be a crowd pleaser.

Peanut Butter Chocolate Chip Cookie Dough Dip

Ingredients

  • 1 1/2 cups chickpeas (1 can, drained) (250g)
  • 1/8 tsp plus 1/16 tsp salt
  • tiny bit over 1/8 tsp baking soda
  • 2 tsp pure vanilla extract
  • 1/4 cup peanut butter {if you don’t want the peanut butter taste, you can sub oil for a regular chocolate chip cookie dough dip}
  • 2 tbsp cup nondairy milk
  • 2 to 3 T oats {You can omit, but also omit the milk if you do}
  • Brown Sugar {I used 2 tbsp Splenda brown sugar blend. If using regular brown sugar, use 1/4 cup}
  • 1/3 cup chocolate chips

Directions

  1. Place all ingredients excluding chocolate chips into a blender or food processor.
  2. Blend for a minute or two until very smooth.
  3. Remove from blender or food processor and place in serving bowl.
  4. Mix in chocolate chips. Sprinkle a few on top for looks and you’re ready to serve!

Now there are several things you can dip into this delicious concoction. My favorites are Wheat Thins Honey Wheat Stix, regular graham crackers, animal crackers or any kind of apple. {I’ve tried yellow delicious, gala, granny smith and pink ladies!} I’m sure there are TONS of other tasty treats you can dip with. Then there’s also my preferred method which is eating it by the spoonful/sticking my finger in 🙂 Don’t worry, I only stuck my finger in at home! You know you do it too!

By the way, did I mention that this dip is actually healthy? I’m sure you figured it out by the fact that there are chick peas involved. I would definitely recommend this to everyone to bring to their next party! With the holiday season sneaking up on us quickly, this is an easy, fun treat to add to the table. Plus, you can use holiday chocolate chips or add sprinkles to make it festive! I hope you enjoy it as much as I do!
