Paleo Banana Bread Recipe

Anyone that’s been around here for a while knows that I have a few different food allergies. Now that Charlotte is living with us, we have a new allergy to work around! Charlotte has a gluten intolerance, so when I’m baking and cooking, I try to think of some recipes that are gluten free. Now don’t get me wrong, I still bake my full fat, full flour, full sugar treats, but every now and then I like to experiment with healthy and gluten free recipes.

I am an avid reader of Jen’s blog, Peanut Butter Runner. Back in April she came up with a paleo banana bread recipe that I just had to try! Well, I didn’t have quite the same ingredients as she did, but I had most as well as some substitutions. Here’s what I came up with…

Ingredients

  • 3/4 teaspoon of baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon of salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1 cup of almond flour
  • 2 tablespoons melted coconut oil
  • 2 eggs
  • 1/4 cup of maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 very ripe medium to large bananas, mashed

Directions

1. Preheat oven to 350 degrees and spray with non-stick spray, butter or use parchment paper. {Parchment paper is awesome because it less clean up!}

2. In a medium bowl, whisk together baking soda, baking powder, salt, cinnamon, all spice and almond flour.

3. In a separate small bowl, mix together coconut oil, eggs, bananas, maple syrup and vanilla until very well combined.

4. Add wet ingredients to the dry and gently mix together until combined. Do not overmix.

5. Pour batter in prepared pan and bake for 45-55 minutes or until set in the center and a toothpick comes out clean. Let cool in pan for about 15-20 minutes before removing to a wire rack to cool completely.

6. Cut and eat!!! I’m a big fan of adding some delicious Justin’s Almond Butter on top 🙂 {Be still my hungry heart!}

This paleo banana bread recipe makes 12 muffins which is the perfect amount if you ask me! They’re great for breakfast or an afternoon snack! You can also make it in a loaf pan and cut off slices of course.

Next time you have some brown bananas give them a try. I promise you won’t miss the regular flour or the sugar. They’re just the right amount of sweet!

I think the best way to eat these is topping them with a gob of peanut or almond butter, but they’re still great just on their own!
