Whole Wheat Oatmeal Chocolate Chip Muffins

Yes. They are as delicious as they sound! It’s kind of like an oatmeal chocolate chip cookie {yeah, you know how good those ones from Potbelly are}, but in the form of a muffin. This pretty much means that it’s acceptable to eat for breakfast. Don’t get me wrong, I’ve been known to eat cookies for breakfast. Especially after a run, since at that point I obviously deserve to eat a cookie for breakfast. However, it’s not really socially acceptable to go around serving people cookies for breakfast. Unless, of course, it’s disguised as a muffin. Maybe I should change the name of these to Oatmeal Chocolate Chip Cookies in Disguise. While that sounds kind of cool, it’s not quite as descriptive as I’d like it to be. I mean, come on…muffins, like cookies…but for breakfast. How cool is that?

I clearly need to work on this sweet tooth of mine. I like love sugar. It is my weakness. I know that many of you had a preconceived notion that I don’t have weaknesses, but everyone has their kryptonite and mine comes in the form of sugar and things that sugar goes into and generally turns into baked goodness. Oh and peanut butter, but we’ll save that for another day.


Makes 12 muffins
{Each muffin is 130 calories if you follow my healthier options!}


  • 1 cup whole wheat flour
  • 1 cup oats {I used Quaker Old Fashioned}
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2 tbsp + 2 tsp Splenda Brown Sugar blend {use 1/3 cup of regular brown sugar}
  • 1 egg
  • 1/4 cup {1/2 a stick} room temperature butter
  • 1 tsp vanilla extract
  • 1 scoop vanilla protein powder {optional}
  • 1 cup almond milk
  • 1/2 cup chocolate chips
  • Dash of salt


  1. Soak oats in 1/2 cup of milk and set aside for about 5 minutes.

2. Beat egg and brown sugar until mixed. Add in butter and vanilla. Beat until smooth. {Butter may have a few chunks still}
3. Add in the flour, baking powder, protein powder, cinnamon and salt and mix. Add in oat and milk mixture. Mix then add the remaining 1/2 cup of milk until well combined.

4. Fold in chocolate chips.
5. Bake in oven at 350 degrees for 15-18 minutes. Mine took about 17 minutes!

6. Remove from oven and let them cool!
7. Eat and enjoy! Feel free to put a little butter on them or if you’re obsessed like me, peanut butter is another delicious topper!
