Christmas Recipes!

6 more days left in Pittsburgh! I can’t believe it. The days are flying by and I have SO much to do. {Why am I blogging?} I’m sure I have better things to do…nah. This is my stress relief, joy and entertainment. We all deserve that no matter how busy we are right?

I have a few fun recipes for everyone from yesterday’s posts to share with y’all today! I hope you enjoy!

Easy Peanut Butter Blossoms
{makes 24}
1 cup regular peanut butter
1 cup sugar
1 tsp vanilla
1 egg
Red & Green sugar sprinkles {plain sugar will work too}
24 Hershey kisses unwrapped

Preheat oven to 350 degrees. Combine all ingredients in a large mixing bowl. Mix together using a large spoon until all ingredients are mixed well. {Make sure that all the sugar and peanut butter is mixed at the bottom as well!} Roll dough into 1 inch balls. Dip ball into colored sprinkles and roll until top half is coated. Place each ball onto your ungreased baking sheet and place in the oven for 10 minutes. As soon as you take the cookies out of the oven, press the Hersey kiss into the center of the cookie and TADA! You’re done. Allow to cool for 5 minutes and then eat while the kiss is warm and gooey!

Cake Batter Truffles
{makes about 30-35}
{Found on Pinterest, adapted from Chef in Training}
1/2 cup {one stick} unsalted butter
1/4 cup Splenda sugar blend {1/2 white sugar}
1 1/2 cups flour
1 cup yellow or Funfetti cake mix
1 tsp vanilla
1/8 tsp salt
3-4 tbsp Almond milk {regular works fine}
Sprinkles!!! {I used Christmas ones :)}
16 oz of chocolate candy melts {White chocolate candy melts would look prettier, I just didn’t have any.}


Using an electric mixer, cream the butter and sugar. Blend in the vanilla followed by the dry ingredients {flour, cake mix, salt}. Add in the milk starting with 3 tablespoons. If necessary, add more by the tablespoon to make a doughy consistency. Then mix in the sprinkles!
Once your dough is ready, roll into 1 inch balls and place on wax paper. Chill the balls in the refrigerator for 15 minutes to allow them to firm.
While the balls are firming, melt your chocolate candy melts in a glass dish in the microwave for 30 seconds at a time at half the power. Once the balls are chilled and chocolate melted, use a fork to dip each ball into the chocolate. Make sure it’s completely covered! Repeat with the remaining balls.
If you want, add some sprinkles to the top of your truffles while the chocolate is still drying so they stick!

Seriously, these are both super yummy and easy to make treats during the holiday season! Let me know if you try one out and let me know how you like it!
