4th of July Extravaganza weekend!

Happy belated 4th of July to all of my faithful readers! I took a few days away from my computer to enjoy the sunshine and an extra day off! I hope you enjoyed a 3 day weekend filled with family, fun, food and fireworks!

Excuse the wet hair and glasses, but our A/C went out…again

Saturday JP and I went to the outlets in Grove City, PA which is only about an hour away. These outlets were AMAZING and the sales were even BETTER. Seriously…it was ridiculous. JP and I were there for a few hours, walked about 3 miles according to my pedometer and spent less than $200 for all of this stuff.

How awesome is that? I mean I got a jacket from White House Black Market that was originally $120 for only $9.99! And remember, PA has no sales tax on clothing…EVER! The rest of the day was pretty chill and then we went to see Bridesmaids…finally! It was absolutely hilarious and anyone who hasn’t seen it yet should go right now.
Sunday morning JP and I work up early and headed out to the trail for our 1st “long run” for our half marathon training program for our Philly run in September! Since it was our first, it was only 5 miles, but we rocked it. After we got home and showered, it was time for church! After church it was cleaning time! Momma and Daddy Goulger are coming to visit us THIS WEEKEND and we couldn’t be more excited for them to come see us! Sunday night we went on a date to Saga Sushi and Hibachi Grill! We were super excited about hibachi and it was the first time that JP and I went together!

You know what the best part about Monday was? The fact that JP and I didn’t have to work 🙂 You know what the worst part was? The fact that our A/C went out AGAIN!!! It was up to 86 degrees in our house and it was not fun. We spent a lot of the afternoon playing with Maggie in the backyard and she was exhausted. I also took her on a quick 2 mile jog around 2pm and I think it was a bit too hot for my little girl!

JP and I definitely made some yummy food for the 4th! I made an American Flag fruit pizza and JP grilled some chicken, zucchini and corn on the cob! Unfortunately, I forgot to take a picture of our dinner! I do have my fruit pizza recipe for you though!

Fruit Pizza
1 Pillsbury sugar cookie dough
4 oz 1/3 fat or fat free cream cheese, softened
1 tub fat free Cool Whip
2 tablespoons coconut rum
Sliced strawberries
Blueberries
2 Bananas
You can also add other fruit like kiwi, sliced grapes, diced peaches, etc.
Directions
Preheat oven to 350
Let the dough come to room temperature, and press it into a cookie sheet – make sure it is thin.
Bake for about 10 minutes, rotate pan, then bake for another 5. The baking time will all depend on how cold the dough was and your own oven, so be sure to watch it carefully. You really don’t want it to over bake!
Once the cookie has cooled, beat cream cheese, rum and Cool Whip with a hand mixer. Then, spread onto your cookie crust.
Top with all of your yummy fruit choices. As you can see, I made an American Flag!
I had some left over Lemon Poppy seed dressing from Panera Bread which I used as a glaze and spread over all the fruit as a bit of added pizazz!
Put pizza into the fridge and let cool for at least an hour.

I must say, it makes a great breakfast the day after!!!
I hope that everyone had a wonderful 4th of July weekend! I wish I could have been in Texas to celebrate with my friends and family, but I must say JP, Maggie and I had a blast. I am so thankful for them, we are the perfect little family. And in honor of our Independence, I was to thank all of our soldiers and veterans that are fighting/have fought to keep our country free. It is something that we so often take advantage of. God bless the USA!
