It’s Friday, I’m in love!

No really, that’s a picture of the resort we’re staying at in Cape Cod. Hello gorgeous! I will be enjoying cooler weather, amazing company and beautiful surroundings. Our agenda includes the Zooma Women’s half marathon, a ferry ride and day spent at Martha’s Vineyards, strolling around Boston, exploring Freedom Trail, shopping in Cape Cod and so much more. Can’t wait to see what all we can pack in on our 4 day adventure!

Try This Thursday: Paleo Banana Bread

Anyone that’s been around here for a while knows that I have a plethora of food allergies. Now that Charlotte is living with us, we have a new allergy to work around! Charlotte has a gluten intolerance, so when I’m baking and cooking, I try to think of some recipes that are gluten free. Now don’t get me wrong, I still bake my full fat, full flour, full sugar treats, but every now and then I like to experiment with healthy and gluten free recipes.

I am an avid reader of Jen’s blog, Peanut Butter Runner. Back in April she came up with a paleo banana bread recipe that I just had to try! Well, I didn’t have quite the same ingredients as she did, but I had most as well as some substitutions. Here’s what I came up with…

Paleo Banana Bread
(Recipe adapted from Comfy Belly & Peanut Butter Runner)


3/4 teaspoon of baking soda
3/4 teaspoon baking powder
1/2 teaspoon of salt
1 teaspoon cinnamon
1/4 teaspoon all spice
1 cup of almond flour
2 tablespoons melted coconut oil
2 eggs
2 very ripe medium to large bananas, mashed
1/4 cup of maple syrup
1 teaspoon pure vanilla extract


1. Preheat oven to 350 degrees and spray with non-stick spray, butter or use parchment paper. {Parchment paper is awesome because it less clean up!}

2. In a medium bowl, whisk together baking soda, baking powder, salt, cinnamon, all spice and almond flour.

3. In a separate small bowl, mix together coconut oil, eggs, bananas, maple syrup and vanilla until very well combined.

4. Add wet ingredients to the dry and gently mix together until combined. Do not overmix.

5. Pour batter in prepared pan and bake for 45-55 minutes or until set in the center and a toothpick comes out clean. Let cool in pan for about 15-20 minutes before removing to a wire rack to cool completely.

6. Cut and eat!!! I’m a big fan of adding some delicious Justin’s Almond Butter on top 🙂 {Be still my hungry heart!}

This recipe makes 12 muffins which is the perfect amount if you ask me! They’re great for breakfast or an afternoon snack! Next time you have some brown bananas give them a try. I promise you won’t miss the regular flour or the sugar. They’re just the right amount of sweet!

Oh hey lovelies! I’m reaching out to y’all a little late today because, well, I’ve been a bit busy this morning. You see, I woke up bright and early at 6:00am, got a little studying done, trained my 7:30am clients and then took off for the testing center. That’s right, I finally took my NASM CPT exam this morning and I PASSED!!! Whew, talk about relief 🙂 Here’s some proof, you know, in case you didn’t believe me or something…

Now ignore that ridiculous photo and examine the lovely words inside the pink bubble. It’s like opening college acceptance letters. If it starts with “Congratulations!”, then you’re in the clear!

Do y’all know what this means? Not only am I actually certified to be a personal trainer, but I don’t have to study in all of my free time anymore! I can get things done, like cleaning, running errands and most importantly shopping 🙂

Since I’m full of good news today, I’ll just continue.

  • Yesterday, I signed on my first client which means I get a bonus! 
  • I’m taking over 2 female clients from my former trainer as he is leaving the gym. They work out together twice a week and will be up for renewal in October and have already said they want to resign with me! More bonus!
  • Another female trainer at the gym was recently accepted in to fire fighter’s school and told me she has at least 3 clients she wants to pass on to me. She chose me! Seriously it feels so good.
All the studying paid off. I wish I hadn’t been so stressed or fearful about it, but that is long gone now! I’m officially a personal trainer and things are looking great!

Happy Fall Y’all!

Happy Monday and happy fall y’all! Fall-ish weather really did hit southeast Texas this weekend and it was miraculous! It was even 71 degrees cool this morning with low humidity so it actually felt that cool! Will it stay? Who knows, but I’m loving every bit of it.

You want to know what the best part of it officially becoming fall is? It’s my birthweek. Yes, that’s right. After celebrating all month long, the week of my birth is finally here. Best part is that is on Saturday so I really get the full week 🙂

Now onto my weekend. In a nutshell, it went something like this:

  •  Drive to College Station
  • 8 mile run around campus in the rain
  • JP locks keys in car
  • Amy gets pissed and plays on the playground nearby
  • Pop-a-lock rescues us
  • Tailgating at the bars on Northgate
  • Fightin’ Texas Aggie football beats the hell outta SMU!
  • Study, study, study
  • Brunch with the Gouglers
  • Drive home to Houston
  • Teach step
  • Sleep on couch!
And it looked something like this:

Yup, another weekend in College Station! But guess what? We have three weeks off from home football games! Don’t get me wrong, I love it. But four weekends in a row is rough and I could go for a mini break 🙂

Here’s the full locked car story. JP had the key while running. When we got back to the car he opened it up, luckily, handed me my phone and then it started raining a bit harder. To keep the rain from getting in the car, he hit what he thought was the “unlock” button and closed the door. Nope he hit the lock button and left the key sitting on the driver seat! Oh boy was I pissed. It was raining, I just finished running 8 miles and I was getting hungry. Not cool. We parked at a park/pavilion so I had a playground. Good thing because 15 minutes of waiting mad wouldn’t have been a good thing 🙂 P.S. This is the second time we’ve needed Pop-A-Lock post run because of my hubby. HA!

Today’s Blogtember prompt is React to this word: Comfort.

I feel as though this is so appropriate for me right now! I am so far from my comfort zone right now. I love routine, security and the known. Now my routine is lacking and different every. single. day. While I have a job, it’s not the 40 hour a week, full time salary that I’m used to. It’s absolutely okay, but out of my comfort zone. Oh and as for the known…there are SO many unknowns right now. Will I pass my NASM CPT test? Will I fit in at the gym as the only female trainer? Will my clients like me?

You know what the best part of feeling uncomfortable is? The risk is worth the reward. I feel as though I have grown so much and have found more of myself through this chapter in my life. I feel stronger than I’ve felt in a while. I needed to be uncomfortable. Despite the discomfort in my life, I have SO many things that still make me comfortable. I guess finding comfort is really just a balancing act 🙂

To me, comfort is

…my morning cup of coffee.

…watching football on Sundays in my jammies with my hubby.

…snuggling with my puppies.

…cookouts with my entire family.

…warm, home-made chicken noodle soup.

…hot chocolate with peppermint schnapps on Christmas Eve spent in the hot tub with my whole family.

…running for me for as long as I want as fast as I want.

…Aggie tailgates with my friends.

…the holiday season. It’s my favorite and everything about it makes me feel like everything is just right!

Thankful Thursday!

From wordless Wednesday to thankful Thursday! So I’m participating in a brand new link up with two lovely ladies {Crystal and Jenna}and y’all should join in! Lately I’ve had so much to be thankful for that this is only to appropriate.

Lately I am thankful for…

…Pumpkin spice M&M’s.

…my birthmonth.  September really is the best!

…being able to spend the day with my mom’s doing fun things like reading in the sunshine, going to Costco, cooking dinner and chatting about everything while sipping Deep Eddy grapefruit drinks.

…my amazing supportive husband. He pretty much gets me through everything even when I tell him he’s not helping, he really is. Don’t tell him though! 😉

… crock pots. Seriously those things are amazing and they help me make some pretty delicious dinners!

…the ability to travel and explore the world! I’ve been so fortunate to travel a lot over the last few years. Next up Boston! I can’t wait to meet Jodi!

…my amazing friends. This year has been one of the hardest for me for multiple reasons. I have some pretty amazing men and women in my life that I couldn’t imagine living without.

I’m feeling so blessed and for that I am so thankful! Now join in and link up!

Oh the memories…

Going back to College Station for football in the fall often brings back so many memories…the good and the bad. I takes me back to a time that was simpler than now, but seemed more complicated than ever. I sometimes even get butterflies when I think back to a certain time or place. Remembering the late night AIM sessions I had with JP before we were officially a couple. Going to the Tap with Nikki on a Wednesday or Thursday. Tailgating with Ol’ Ags. Date parties. MSC LEAD. Teaching preschool gymnastics. Getting engaged to the man of my dreams. Graduating from the Dwight Look College of Engineering. Moving back to Houston. So much nostalgia lives in that place. I left a part of me there and it is also home. Today’s Blogtember post is:

Tuesday, September 17: A memory you would love to relive.
There are a lot of memories I would love to relive. So many of them took place in College Station, but it may come as no surprise that the memory I would most love to relive took place in a church in Sugar Land, TX.
I want to relive the moment my daddy walked me down the aisle with the biggest smile on his face and gave me away to my prince charming.

I want to relive our special moment in the church after we lit the unity candle. It was almost like no one else was there but just the two of us.

I want to relive the moment when Father Drew told JP that he may kiss his bride.

One of my most favorite pictures ever.

I want to relive our first dance. Though it felt like the longest song in the world, it was perfect being in the middle of the dance floor with no one but my husband.

I want to relive the party that went down with all of our friends and family who showered us with so much love. We are incredibly blessed to have this many people support our marriage.

So pretty much, I want to relive my most perfect day ever. At least I have some fabulous pictures to remember it by 🙂

The Game of the Century of the Week

Happy Monday my loves! I’ve already started laundry, gone to the gym, ran 3 miles, did upper body, played with my puppies and now I’m blogging. Nothing quite like leaping back into the work week full speed ahead! Let’s slow down and rewind for a moment now shall we?

This weekend was awesome. Obviously, once again my weekend was spent in College Station. Yes we have 4 home games in a row, then 3 weeks off {2 away and bye week} then another 4 home games. That’s a lot of weekends in College Station and I am not complaining. This weekend was different than the rest. This was the big game.  The game of the century of the week as ESPN would call it 🙂

In honor of the big game, the hubs and I had a 3 day weekend.
It all started Friday…

It’s training season, so of course I had to run. I started the day at 4:45am running 12 miles followed by helping my girlfriend Ashley move! Luckily we had JP to help us with the heavy stuff 🙂 Then we were off to College Station. Nothing too exciting happened Friday since we had to gear up for Saturday and quite frankly I was exhausted.


Wow. Just wow. We started tailgating at 8:00am for our 2:30pm game and it was awesome. We really did it right for this tailgate. Everyone chipped in and we had tons of delicious food and drinks! The game was awesome too. We may have lost {49-42 Alabama} but scoring the most points ever on Nick Saban was pretty awesome. The Aggies held their own despite all the nay sayers and it turned out to be an awesome game!!!

It was a slow motion kind of day. We were wiped from being in the sun, standing on our feet, yelling at the top of our lungs and day drinking on Saturday. We had brunch at the Gouglers and then the girls went to get pedicures. Hello relaxing! The rest of the day was spent watching football, driving back to Houston and reading on my Kindle. I rarely have a full rest day, so this was an excellent treat. My body is thanking me 🙂
