Summer Eats + A Smoothie Recipe

It’s summertime and the livin’ is easy right? Wrong. Now that I’m a real live grown up I still have to work, keep the house clean, do dishes and laundry, etc. I still have to go on with life as normal with no more summer break.

No more wasting my days soaking up the sun by the side of the pool. {Okay I so do that on the weekends.} The only different is that it is H.O.T. Thank God for air conditioning. When it’s that hot out, the last thing I want to do is cook a hot meal or eat a hot meal and trust me, I love to eat. So here are a few of my go-to foods during the sweatfest that we call summer in Houston.

Smoothies are my go to.

I love smoothies. They’re easy on my tummy and allow me to get servings of fruit, veggies and protein! I posted one on Instagram last week that received lots of great feedback, so here’s my summer smoothie recipe.

What you need:

  • 1 frozen banana
  • 1 scoop of your favorite chocolate protein powder
  • Tablespoon of almond butter
  • Tablespoon of Nikki’s Cake Batter Coconut Butter {any other coconut butter will work, but you should go buy this stuff!}
  • 1 cup unsweetened vanilla almond milk {or other milk of choice}
  • Optional: a few ice cubes
  • Optional: a handful of spinach 

Directions:

Gather all ingredients. Dump into blender. Blend well. Pour into super cute mason jar. Add a cute straw. Enjoy and be glad that you didn’t have to turn on the oven!

It’s as simple as that! I’ve made this summer smoothie recipe for lunch a few times and it’s nice and filling! Plenty of protein from the powder and almond butter and adding spinach gives you much needed veggies and nutrients!

Here are some of my other go to summertime foods.

  • Peanut butter and banana sandwiches or toast.
  • Salads! As long as my stomach is having a good day. Greek salads are my favorites! This one has feta, tomatoes, capers, portobello mushrooms and balsamic vinegar dressing! Oh and a nosy puppy on the side.
  • Carrots and hummus
  • Green juice. I tried some from Trader Joe’s that was delish!
  • Fresh fruit! I’m on a total watermelon kick right now.
  • Taco bags! While it is a warm dish, you can at least cook a big batch and freeze the rest in baggies so you don’t have to cook multiple times. You can find the recipe here!
