Don’t eat the eggs!

Guess what?! It’s Monday again. I surprised you didn’t I? Guess what else? I don’t have anything too exciting to tell y’all today. Most of my weekend was great, but rather uneventful.

There were two rather unpredictable things that this weekend was focused around: My Stomach and The Weather. Weird I know.

Friday was fantastic. My momma came to my house bright and early so that she could go with me to the ultrasound of my belly. Fun stuff let me tell you. After the ultrasounds, we grabbed breakfast at Le Peep and then I had to work. Boo. Luckily I was able to work from home the rest of the afternoon though. When the hubs got home we decided that it was too pretty out, so we went to Little Woodrow’s for a few drinks on the patio. Later that evening, my love Kathy came over and we downed a bottle of wine together, talked too much and caught up since it had been FOREVER since we saw each other!

Saturday started out great. I woke up way too early, cleaned up the kitchen and made coffee for everyone! Then JP, Kathy and I went to Barnaby’s for breakfast. This is where things went downhill for me. I decided that I really wanted a few bites of eggs. Y’all I took 2 bites. Just two. No more, no less. Let’s just say that about 30 minutes after leaving the restaurant, I spent the next 30 minutes removing everything from my stomach. Note to self: You are allergic to eggs. Don’t eat them. No matter how bad you want them. Just don’t do it. Yup, I was real dumb. Instead of taking it easy, I decided to go about my day as planned which involved yard work. Fun stuff. The hubs and I did that for a few hours and then ran a few errands. After running around, I was supposed to meet up with Ashley & Alison at the dog park, but my stomach had other plans. It’s plans involved taking a nap on the couch. I’m glad I actually listened this time because it ended up practically monsooning in Houston! I ended up on the couch for the rest of the day and the hubs put me to bed at 8:30pm. I’m a real party animal, let me tell ya.

Sunday I was still off, but better so we loaded Maggie into the car and ventured up to College Station for the day to see JP’s parents! It was fantastic 🙂 We had lunch a Blue Baker, lounged, chatted a bunch, played outside with the pups and had a delicious dinner all in the 8 hours we were there. Definitely something we need to do more often!

Testing Day 1

First things first, I need to say thank you to everyone that read my post yesterday and has reached out to me. You have no idea how encouraging your words have been. The last two pretty real/serious posts received a lot of attention and comments. It’s not the attention that I really care about, but people reaching out to me, encouraging me, consoling me, whatever it may be. I have had people from high school and college that I haven’t talked with in years offering me guidance and support. It’s amazing how when you put yourself out there so many people are willing to be there for you. It really gives me faith in humanity. It also reminds that I’m lucky to have this many people in my life who care. So thank you again for your kind words. I hope you know how much they mean to me!

That being said, today is testing day 1 for my tummy issues. Day 2 is tomorrow. I’ll keep y’all updated as I learn all the gory details. I figured I started putting it all out there and I want to continue just in case it helps someone in a similar situation.

Its Ok Thursdays

It’s OKAY…

…that I have to sit for up to 4 hours while doctors monitor my stomach this morning. Okay I lied, that’s not really okay with me. I can’t sit in a car from Houston to San Antonio (3 hours) let alone in a room at the hospital!

…that I’m not sure what I want to be when I grow up.

…that I still want to be a Disney Princess.

…to put it all out there. Sometimes you get more back then you expect.

…to wish I was out running in the sunshine right now.

… that I wore a watch with dead batteries to work and didn’t notice until about 11am. Then I proceeded to look at said watch for the rest of the day. In case you were wondering, it was a long day. The time never went past 7:35.

…to wear a sweater and coat because the high is 65 degrees in Houston. Coats are required below 70 for this girl. Needless to say, living in Pittsburgh was pretty rough for this girl who can’t handle the cold!

…to realize that I watch random tv shows.

…to be ready for Friday every Monday and to be really ready for Friday come Thursday!

…to be completely obsessed with my psycho dog 🙂

Welp, I’m probably at the hospital while you’re reading this. Cross you fingers and say a prayer that we figure something out from this testing! Here goes nothin’!

A Leap of Faith

Do y’all ever wonder what exactly are you doing in life? Do y’all still try to figure out what you want to be when you grow up? Please tell me I’m not alone. {Secretly I still want to be a Disney Princess when I grow up, but we’ll keep that between you and me 😉 }


Some days I feel like so many people that I know have found a job they love. I am a firm believer that you should love what you do, not just like it. You spend so much time and energy at work that not liking or loving your job isn’t exactly a good thing.

Y’all, I don’t love my job. I definitely don’t love sitting at a desk, behind a computer screen or in meetings for 8 hours a day. I know we need people in Corporate America in order to keep the world running the way it does today. I’m just not sure that I’m cut out for Corporate America. I’m good at what I do. I like it most of the time, but more often than not I find myself counting down the minutes until 5:00pm and dashing out like the building is on fire. Work is called work for a reason, but my heart should be in it more than it is.


Another thing, I’m not particularly thrilled to be a part of my company’s culture. People that have been here a while are set in their ways. Change is bad around here. You know what I was brought in to do? Help make a change. You can go ahead and assume that I’m not a favorite around these parts. You wouldn’t be wrong. To top things off, I may as well be considered an infant around here. There are a few people within 10 years of my age. As in they graduated from college 8 years before me. Fantastic. On the plus side, my boss is a rock star. He is understanding, helpful and makes me feel like I’m doing something right. He’s a great mentor and is easy to get along with. The problem still boils down to this. I don’t feel like I belong.

I’m passionate about running and fitness. I miss teaching group exercise. And I love the idea of branching out into the world as a professional in fitness. But that’s just it. I love the idea. I’m scared to death of actually doing it. Would I really love it? Will it be the job my heart is looking for? I don’t know. I guess I won’t know until I put on my big girl panties and go for it. I just have so many questions…

Am I ready to take this big leap?
Should I take the Personal Trainer Certification before changing careers?
How do I know I’m going to love it?
Am I willing to let go of my comfort zone or having a steady job and pay check?
How will effect my family?
What do I need to know and do to make it a reality?


And so much more. Trust me, I won’t bore y’all with the constant rambling questions inside my head. I’m lucky to have so much encouragement from close friends. I have contacts in the fitness world from my past teaching at Texas A&M. I just need to figure out what’s going on in my head and decide who, what, when, where, why and how. Once I get the 5 W’s and the H figured out, maybe all of the questions in my head will have answers or at least my heart will be fine with the answer “I don’t know.” I mean, all of this comes down to a fear of the unknown right?


I decided to do a little Googling on career changes and I found this on Passion Pursuit: Baby Steps or Big Plunge. It basically says one way to start is to take baby steps. I’ve said this before, but now it’s really going to happen. I want need to get back into teaching Group Exercise. It’s my baby step. Getting employed at a gym to start subbing when I can. So wish me luck y’all. I’m going to figure out what I want to do with my life. I just need to get started.

I think it’s time to take the jump. Or at least inch my way to the edge.


I originally wrote this post last week as a way to get my feelings out there and understand what is going on inside of me. Since then, I have contacted several of my old Group Ex girls to see which CPT exam I should take and I’ve reached out to 24 Hour Fitness to see if I can start teaching there again. Just a few steps closer to making the jump whatever the jump may be.

Honeymooning in Barcelona

When you think of a honeymoon, do you think of everything going smoothly, relaxing somewhere exotic with a drink in hand and just enjoying your perfect first week of marriage? Well if you read Mrs. Charlotte’s blog yesterday, then you know there are some things you should know before your honeymoon. Unfortunately, there are some things that happen on your honeymoon that are not only unavoidable, but practically unimaginable. That being said, I’m going to introduce y’all to my wonderfully, interesting honeymoon in none other than Barcelona!

It all started out innocently enough. We woke up in our hotel the morning after our wedding, made it over to my parents house to say bye to our wonderful, family and friends that would be enjoying another day of partying and were whisked off to the airport! The flight to Barcelona was smooth, we got a little sleep, but not enough since I was a bit crabby the first afternoon in Barca!

We stayed at Hotel Barcelona Universal which we actually found via Expedia and it was perfect! It was walking distance from Las Ramblas where a girl can shop and eat her heart out! It’s a very modern hotel. I would call it swanky for sure 🙂 I don’t actually have any pictures from our room, but here is one from the website!

We stayed in the Superior Room which are slightly bigger than the regular rooms and a full buffet breakfast was included each morning! We were able to upgrade for free for our honeymoon! We truly enjoyed this hotel and they had great service which we will come back to later in our journey.

The first few days in Barcelona were so much fun! We did a two day on and off bus tour of the city. There were several routes and stops where you could choose to get off as you please. We saw the Segrada Familia, Park Guell, The MNAC, Olympic Park, Monestir de Pedralbes, Futbol Club Barcelona and so much more. Notice how I tell you all these wonderful places we visited without any pictures? Oh that’s because my camera was stolen. Out of my husbands pocket. Sucks huh? We were out at a bar after day 2 of the bus tours watching a soccer match. We left the bar and started walking back to our hotel where there were some gentlemen trying to get us to go into their night club. One guy put his arm around JP and started pressuring him to go in and we’re pretty sure that’s about when he jacked it. Worst part? It was my momma’s camera and she had pictures from the wedding on it to. So many memories in such a little package just gone. Luckily, I had thrown my little Flip Camera in my suitcase before we left so I had a means of taking more pictures!

So what does one do when all of their glorious pictures from Spain are no longer in their possession? Retrace your steps. By foot. Make new memories. I can honestly say that walking around the city, taking the subway and figuring out another way to get to our favorite places was such a blast. We made it by subway back to Park Guell…

This was one of my favorite places. We may have spent even more time here the second time! There is just so much to see and Gaudi’s architecture is simply stunning. Looking back, this would have been the perfect place for a picnic lunch.

We walked up a mountain to get back to the Montjuïc Castle. The first time we went we rode up on the Telefèric de Montjuïc which is a cable car ride to get you to the top of Montjuïc to see the castle! Walking up the mountain was a completely different experience, but so worth it!

From there we were able to walk to Olympic Park and then over the The MNAC. On our original bus tour, we actually toured the Museu Olipic and The MNAC, but since we had already seen everything, we decided to save our money for something else…


I love anything and everything that involves animals…aquariums, zoos, you name it. I was so pumped because Barcalona has one of the BEST aquariums in the world along with an 80 meter long tunnel where you can walk through with the sharks swimming over you! Oh I was like a little kid in a candy shop! Ever since swimming with sting rays in Cayman, I have been obsessed. The rays at the aquarium were so cute and I think they wanted to be my friend!

Another thing we saved money for was shopping! Oh yes, shopping in Barcelona is AMAZING! They have the cutest clothes and so many reasonably priced stores…and a lot of ridiculously expensive, fancy store that I cannot afford.

Some of the other things we did were…

…get lost.
…walk along the coast.
…shopping on Las Ramblas.
…eat tons of great food at all the little hole in the wall places.
…drink lots of Sangria.
…visit St. Josep outdoor market and get food for a picnic on the beach.
…enjoy our time with each other.

All was great until the volcano. What? Volcano? I’m sure you’re wondering what on earth I’m talking about. Remember that volcano that erupted in Iceland April 2010? Volcano Eyjafjallajökull {say that 5 times fast} erupted while we were in Spain. This special volcano interrupted air travel in Europe for 6 days. Luckily we were only stranded in Spain for an extra 2 days. Now I’m sure you’re thinking, geez Amy, it’s not like Spain is such a terrible place to get stuck. You are correct, but as newly weds that have already spent a pretty penny on this trip we were about to spend a lot more than we expected…

The hotel was wonderful. Because of the incident, guests with current reservations were allow to extend their stay before they offered your room to someone looking for a new hotel. Isn’t that awesome? So we were able to stay put and explore the city through the haze. We were able to get in touch with one of my colleagues whose wife is actually a travel agent. She was wonderful and helped us get a flight home WAY sooner than British Airways was going to get us home. Since Spain wasn’t as effected as northern Europe, we snuck out and flew through Bogota, Columbia. Crazy right?

Of course, nothing is that easy. On the way to the airport, our cab got a flat tire. We had to wait on the side of the highway with a hooker for a new cab to come get us. Once we checked in {the airport was practically empty!} I needed to eat. What was the only restaurant in our terminal? McDonald’s. I cried. My last meal in Spain was going to be from an America craptastic restaurant that I didn’t even eat in the States. The flight to Columbia was smooth. We landed, hopped on the red eye to Houston and waited. For two hours. On the runway. Going nowhere. Completely exhausted. They eventually fixed the engine issues and got us to Houston. They forgot our bags though. They were still chillin’ in Columbia. Fantastic. So we went home changed and went to work. Luckily, my work sent me home and told me to work from home the next day. JP wasn’t so lucky. Eventually, we got our bags and all was well. It was hellish back then, but makes for a pretty entertaining story now though right?

Barcelona was amazing. I can’t wait to go back in just a few months! Even if it’s only a day, it holds a special place in our hearts.

Too much fun for one post title

This weekend was one of those weekends that I just didn’t want to end. {Okay honestly, I don’t really want any weekends to end, but this one was just perfect!} We did so much, but it was relaxing enough that I didn’t feel crazy busy or overwhelmed. Pretty much this weekend was just too fun. I want to relive it.

On Friday I…

  • Left work just a tad bit early
  • Went on a Spec’s run for samples and booze with the hubs
  • Walked 2 1/2 miles with Miss Maggie, Chandra & her pup Frankie
  • Watched Maggie & Frankie play…a lot! (1)
  • Had BBQ ribs, corn on the cob and fruit salad for an amazing dinner with Chandra and Michael!
On Saturday I…
  • Went for a 4 mile run and felt great! (2)
  • Played at Top Golf with the Crowsons and Waites! (3)
  • Had brunch and unlimited mimosas at Cyclone Anaya’s at City Center (4) Seafood Civiche! 
  • Went shopping with the girls (5)
  • Enjoyed the sunny day at City Center
  • Took Maggie to the Buffalo Bayou Dog Park (6)
  • Watch James Bond Skyfall with the hubs
On Sunday I…
  • Woke up before 7am for no reason at all
  • Went for a 5 mile run and felt even better! {But I may have strained my IT band. Going to take it easy for a few days.} (7)
  • Did laundry…whomp whomp
  • Met up with the lovely Houston Blogger ladies at The Tasting Room in Uptown Park and forgot to take a single picture. {But take a look at the group shot that Meg took below!} I absolutely love these monthly meetups! There were quite a few new faces…or at least new to me! Already looking forward to May’s picnic!
  • Headed to Sugar Land to spend the evening with the fam! (8) My momma’s pretty backyard! 
  • Made homemade french fries out of potatoes (9), soaked up some sun with my seester, chatted and enjoyed our relaxing Sunday evening!

The Vintage Modern Wife: Happies and Crappies Link Up

All the wonderful responses and feedback I got from yesterday’s post. Sometimes it’s hard/embarrassing to put it all out there, but because of y’all, I know it’s worth it. It helps to know that I’m not the only one and to hear what helps others!

I finally got into the doctor yesterday. No new news, but I’m scheduling 3 different tests today to start getting to the bottom of this.

It’s Friday!!!!

Chandra, Michael and little Frankie are coming over for dinner tonight! I’m excited for the pups to play again.

Top Golf = mimosas. I probably shouldn’t with my tummy, but it’s a risk I’m willing to take. Just one or two. Probably two 🙂

We’re actually experiencing Spring weather here in Houston! It going to be in the 70s all weekend!

I went on a longer walk with Miss Maggie this morning and we got to see the sun coming up over downtown Houston!


I still don’t know exactly what’s wrong with my stomach.

I had a low grade fever {99.3} at the doctor yesterday and we don’t know why.

My tummy in general.

Allergies. Enough said.

Missing people you know you can’t talk to and wanting to call and tell them things.

My heart is aching for the incidents in Boston and in West, TX. It’s silly to even think my crappies are a problem because there are people dealing with so much worse. My heart and prayers go out to everyone effected. 

That’s about all I can think of! Despite my yucky stomach, life is pretty good. Things could be so much worse. I hope y’all have a wonderful weekend!

Let’s Get Real

So I don’t have too much to say today and I’m not really in the mood to write too much. I do want to put a few things out there though. About 2 years ago, I started suffering from stomach issues. There’s really not much worst than having your stomach all weird 75% of the time. No fun at all. Anyone that has known me or followed my blog over the past year knows that last year, I went to the gastroenterologist, had some blood work and other tests done, and was “diagnosed” with IBS. Unfortunately, the problem with IBS is that there really isn’t a cure and there isn’t medicine you can take. It’s just about adjusting your diet and finding a way to make it more manageable. Fun right? Not. On top of that, she also learned from one of the tests that I had the H. Pylori bacteria in my tummy. {Ummm…gross} 2 weeks of antibiotics later, that was gone, but the IBS was still there and it probably always will be.

When the doctor diagnosed me with IBS, she also thought that I may have a gluten intolerance so recommended that I go gluten free. Naturally, I followed the doctors order and cut out gluten. No bread or pasta for this carb loving runner. Oddly, my symptoms got worse. I went to get a physical with my primary care doctor and he recommended allergy testing. Turns out, I’m allergic to rice…no wonder I always felt like my stomach was filling up like a balloon about to explode when I ate it! Not only was it rice, but other foods I loved and ate often like oats and eggs. You know what gluten free products use a lot of? Rice and oats. Awesome.

So this led me to following the FODMAP diet which isn’t so but except again, it says no wheat. I ignored that. Over the past year, I’ve found the foods that do and don’t irritate my stomach. I know the triggers and I try to avoid them. Sometimes it’s hard because some are foods that I love like broccoli, brussels sprouts, watermelon, pears, yogurt, ice cream, legumes, so on and so forth.

Now I guess you’re wondering why I’m going on this rant about all my problems. I have a few reasons.

  1. My life is far from perfect and I have my issues just like everyone else.
  2. I want to be real and share my struggles in case someone else is feeling the same way that I am.
  3. I’m still not better. Ask my friends. They see me suffer. Some days I can’t keep food down. Some days I’m running to the bathroom. Some days I’m miserable.
  4. I want to know what’s wrong.

I have an appointment with my gastro doctor today. Thank goodness because they past few weeks have been miserable. I have left work early 3 times and I just don’t do that. I want to know what’s wrong. I honestly think it’s something more than IBS. If it’s affecting my life more than one day a week then there has to be something else. I’m willing to fight now to find out what’s wrong with me. I’ve only run 3 times in 14 days. Because I can’t and don’t want to. I don’t want to because I’m in pain.

So there you have it. It sucks. Feel free to reach out to me if you’ve had similar issues before or are experiencing this now. I hate not knowing what is wrong. I’m ready to figure it out. Whatever it takes. One day and one appointment at a time. Here it goes…

Okay I’m stepping off of my soap box now and throwing out one more thing. One of my colleagues is walking in the March of Dimes March for Babies walk. In fact, he’s walking for his daughter who died of SIDS in 2010. I couldn’t imagine how he feels or the suffering his family went through. He’s a great guy, a fellow runner, an Aggie and above all else a great dad. If y’all feel called to donate to his cause, please take a look at his donation page here. He’s raised $2200 so far and has a goal of $2500 with 10 days left to meet it. He didn’t ask me to put this out on my blog {I’m not even sure he knows that I have one}, but I felt called to share this with y’all. I made my donation this morning and feel so good about it!

That’s all I have for y’all today. I know I said I didn’t feel like writing a lot, but once I got started, I couldn’t stop. I’m not in the mood to proof read all of these words now, so I’m hoping that my ranting and rambling makes sense. Happy Thursday my loves, one day until Friday!

My Fitness Gear & A Giveaway

It’s not new news that I love a good workout. You know what one of my favorite parts about working out/running is? The super cute, fun and different outfits and gear that I get to use to get the job done.

You really can be sweaty and beautiful. Just think, I don’t sweat, I sparkle and you’ll be set. Speaking of sweat, I’m a sweater. Yeah, yeah we all sweat, but I really sweat. Oh and when I run, I’m all sorts of hot when I finish. That’s one part of what makes working out the best. The other part…the clothes. Let’s take a look at what I find myself sweating in most days 🙂

We’ll start from the bottom and work out way up shall we? First things first, socks. I have sweaty feet. Sexy, I know. One way I combat nasty foot sweat is by choosing the right pair of socks. Just any ole pair of socks doesn’t work for this girl. They need to be dry fit and fit just right. I prefer a little compression in the middle to support my high arches as well. Enter PowerSox. I was actually given a few different pairs to test out and review! The Advance Dry Socks and the CoolMax Lo-Cut Liner Sox.

Enough about socks, let’s talk about shoes! I usually run in my trusty Mizuno Wave Rider 15’s, but since they just came out with the 16’s, it was time for me to see what my feet like best. I wasn’t in love with the 16’s so I actually switched to the Saucony Triumph 10. So far I am definitely liking them! I’m still switching between my Mizunos and Sauconys for now. I’ll probably try to find another pair of discounted Mizunos to swap with this year!

Okay moving on up to the legs. Sometimes I like to show them off, sometimes I like to keep covered up. It has nothing to do with me really, just the weather. For cold weather runs, I run in Under Armor running tights. They go all the way down to my ankle and are a bit thicker since they are made specifically for cold running. My usual go to for crops are my Lululemon Run Inspire Crop II. Obsessed. I actually wore them in my very first marathon!

As far as shorts go, I’m not too picky as long as they’re loose. My favorite brands are Nike Brooks and Lululemon! The more colorful the shorts, the more likely I am to buy them. It’s the truth.

Time for my favorite part of the outfit. The tops. This is where you can really spice it up and bring in color. {Along with fun, colorful running shorts!} My favorite brands are easily Lululemon, Nike and Champion. {Sometimes I find some really awesome brands/products at Marshall’s or TJMaxx!} I love that these are all different price ranges! I’ll splurge on Lulu every so often, but it’s usually a gift or a reward. {Like when I crossed the finish line after my marathon, you better believe I was thinking about what outfit I’d pick out at Lulu. Okay that’s a lie, but I thought about it the next day for sure 😉 } My other favorite form of workout tops are the awesome dry fit ones I get from running races! Sometimes it’s fun to show off the races I’ve run. Most races give pretty fun shirts and great brands like Under Armor and Brooks!

So there you have it! I love workout clothes and I think that my collection is pretty intense. I find something new at every race I run and if I see a good deal on something, you better believe it’s mine 🙂 I guess you could say that the clothes keep me motivated to keep running and working out!

Easy Clean Eating Recipes & Meals

It’s hard to believe that we’re already halfway through April. On April 1st, I made a pledge to do my best to eat clean for this month as a part of my 30 Day Commitment Challenge. Since again, we’re already past the half way mark, I thought I’d give y’all a little update on how I’m doing and share some of my clean meals with y’all!

Overall, I’ve been doing a good job of sticking to my clean eating rules: less processed food, more fruits and veggies, whole grain, less sweets and smaller meals. I’ll admit that not everything I eat would be considered completely clean to a clean eater. I have my moments, but overall I’m proud. One set back that I’ve been having has to do with my poor tummy. Those of you that are newer around here haven’t heard about the woes of my stomach. I have episodes that come and go and lately it’s been pretty bad. Veggies are hard on my tummy and bread and chicken noodle soup is good. Makes it hard to eat clean some days. I have a doctors appointment next week and I’m hoping we can do some testing and really get to the bottom of this. It’s no fun at all.

Anywho, let’s just skip to what I’ve been eating lately!

1. Oatmeal – I loved adding fun mix ins like blueberries, almond butter, cranberries, etc.

  • I use 1/3 cup of quick oats, 1 tsp of chia seeds, a packet of Truvia and some cinnamon.
  • Add more water than the package says and cook for twice as long at half the power. It will make your oatmeal bigger, so you have more bites! More bites and you are fuller! {I cook for 4 minutes at power level 5.}
  • Then add in your mix ins and you’re good to go! Mix ins make each bowl of oatmeal different so you don’t think you’re having the same thing every morning!

2. Trader Joe’s Sprouted Multi-Grain Bread with Justin’s Almond Butter and sliced banana
3. Assorted fruits
4. Larabars
5. Oatmeal Banana Muffins

If I get the chance to run home for lunch…
1. Steamed or sauteed veggies with leftover fish or chicken

If I’m at work…
1. Leftovers from dinner that week
2. Chicken or fish tacos in corn tortillas with guac and tomatoes
3. Cafe Express Shrimp and Avocado Salad with no dressing
4. Salads

Here is where the fun is at. I try to have one lean meat, a carb and a veggie!

1. Grilled Chicken with baked sweet potato and grilled zucchini and eggplant

2. Spaghetti squash with ground turkey and Red Gold Died Tomatoes with Basil, Garlic and Oregano.
It’s just like spaghetti y’all! Without all the calories!

1. Cut spaghetti squash in half lengthwise. {See top right pic}
2. Bake in oven rind side up at 375* for 30-40 minutes
3. Separate strands with a fork 
4. While spaghetti squash is baking, brown your ground turkey
5. Add in Red Gold Diced Tomatoes. I love the one pictured above with basil, garlic and oregano because it automatically give it that Italian spice and spaghetti sauce flavor without all of the sodium!
6. Cook on low until heated all the way through
7. Push desired amount of meat and sauce on your squash and enjoy!!!

3. Grilled or baked tilapia, sauteed asparagus and Trader Joe’s polenta!

Eating out for dinner is completely doable as well!
Here are some tricks: ask for no sauce or sauce on the side, order grilled entrees, ask for substitutions if necessary!

1. Shrimp Happy Hour Appetizer from Brio

2. Fresh Gulf Snapper with jumbo lump crab meat {I asked for no sauce} from Brenner’s on the Bayou at our fancy anniversary dinner last week!

So these are just a few of the many clean eating options out there! It’s easier to stick to it than you think 🙂

On the menu tonight is Buffalo Chicken Quinoa that I saw on Meg’s blog just yesterday!
