Try This Thursday: Eggless Baking

Good morning friends! Today I have some recipes to share with y’all! Lately I’ve been working with some eggless baking recipes that I highly recommend.
Since I have to completely eliminate all several items for 2 months to determine what foods were truly irritating my system and egg was on that list, I figured that I should probably find some eggless recipes to test! Now I know that not all test recipes come out very good, so I promise only to share the tasty ones!

Eggless Peanut Butter Cookies

Ingredients:
1 stick of butter
1 cup sugar
1/2 cup brown sugar
1/4 cup almond {or skim} milk
1 tsp vanilla
1 cup flour
1 scoop vanilla protein powder
1/2 cup peanut butter
2 tsp baking soda

Directions:
Preheat oven to 350 degrees.
Cream butter, sugar, milk and vanilla until smooth.
Add in flour, protein powder and baking soda until mixed.
Finally add in your peanut butter and stir until smooth.
I have found that sometimes the mixture is too soft. Place your batter into the fridge or freezer for a few minutes to harden.
Place small dollops of batter onto an ungreased baking sheet. {No larger than a tablespoon ball}
Bake for 12-15 minutes! 

As you can see, I sprinkled raw sugar and mini M&Ms on mine!
These cookies are super soft and kind of muffin like due to lack of eggs. Make sure your batter dollops are small to avoid crumbling! Now here’s the best part about this recipe…they’re only 85 calories each! 85 light, fluffy, sweet, delicious calories!
 
I made this special one for my daddy for Father’s day!

Eggless Whole Wheat Banana Bread

Ingredients:
2 ripe bananas
2 tbsp Greek yogurt
1 cup sugar
3 tbsp butter or margarine
1/4 tsp salt
1 1/2 cups whole wheat {or regular} flour
1/4 cup almond milk
1 tsp baking soda
1 tsp vanilla extract
1/4 tsp allspice

Directions:
Preheat oven to 350 degrees.
Mash bananas in a large bowl. Add in yogurt and sugar and mix until combined.
Add in butter, salt and flour. Beat with hand or stand mixer until combined.
In a small bowl or cup, add baking soda, all spice and vanilla into almond milk and mix well. Add this into your larger mixture.
Continue mixing until batter is well combined.
Pour into a greased bread pan and bake for 50-60 minutes or until tooth pick comes out clean!

 

This recipe my friends serves 12 and comes out to just 105 calories per slice {if you use Stevia Cane instead of sugar – Stevia Cane is a 50/50 mixture of Stevia and Cane sugar!}

I really don’t seem to see much of a difference. However, when I get my booty to the grocery store, I plan on buying an egg substitute to bake with in the future. Even though I can’t eat some of the things I love {eggs, oats, rice, pecans, etc.} at least I can venture out an try new things! I love trying new recipes so let me know if you have something fun!
